Whenever we reference a numbered pouch, we're telling you which in-box pouch to use for that ingredient. For example: "Take 3/4 oil from pouch 1 (Butter/Oil) into the pan" means use pouch 1 from your kit.
Instructions
🔥 Heat the Oil ⬇️ Prep
Take 3/4th amount of oil from pouch 1 (Butter/Oil) in a pan. Heat on medium flame until the oil shimmers (about 1 minute). This indicates the oil is ready for sautéing.
🥔 Fry the Potatoes ⬇️ Cook
Take bite-sized pieces from pouch 2 (Cut Potato) and fry in oil until golden. Drain and set aside.
🥬 Fry the Okra ⬇️ Cook
In same pan fry okra from pouch 3 till fully cooked and crisp. Set aside for later addition.
🧅 Sauté Onions ⬇️ Sauté
Heat rest of the oil in the pan. Add sliced onions and sauté, stirring occasionally, until translucent or light brown.
🧄 Add Ginger-Garlic ⬇️ Sauté
Add 1 tsp ginger-garlic paste; sauté for a few seconds until fragrant.
🍅 Add Tomatoes ⬇️ Cook
Add 1 cup finely chopped tomatoes; cook, stirring occasionally, until soft and pulpy.
🧴 Add Spice Box 1 ⬇️ Spice
Add Spice Box 1. Stir well and cook 1–2 minutes until the oil begins to separate from the masala.
🥗 Add Vegetables & Finish ⬇️ Finish
Add the fried potatoes and sautéed okra to the masala. Gently fold so the masala coats both vegetables evenly. Cook for 1 minute. Add Spice Box 2; mix thoroughly and sauté for another minute to finish.
Finish & Serve
Taste and adjust salt/spices if needed. Garnish with chopped coriander or a squeeze of lemon (optional). Serve hot with rotis, paratha, rice or as a stuffing for wraps.

Pat okra completely dry before frying to avoid sliminess.
